This article analyzes the rethinking of the tourism curriculum at the University of Panama, based on the global and sectoral transformations that have taken place, including the health services of COVID-19. A university tourism curriculum without changes in its curricular structures, despite time and global changes and challenges. As to rethink, it is to overcome the curricular traditionalism that, for many years has emphasized the practicality-operability for tourism employment, leaving aside the development and application of modern models and approaches, backed by innovative pedagogical practices that contribute to the development of skills and make you an agent of global change, improving your quality of life and well-being in a sustained way. The analysis, based on a mixed approach, included two scenarios, the first the application of 99 surveys to graduates and the last years of study, and the second scenario interviews the 3 coordinators of the tourist academic offers. The results obtained showed that the restructuring of the curricula must be based on the proposed models to guarantee a comprehensive, quality, and competitive tourism education in the face of future challenges and changes in tourism.
