This study analyzes the association between innovation and business development in restaurants in Metropolitan Lima. A quantitative, non-experimental, cross-sectional and exploratory study design was used. For this purpose, validated questionnaires were used to collect data from 228 administrative workers and a convenience sample was selected. The variables studied in this study include: innovation in products, processes, marketing, and organization. The analysis was performed using a structural equation model based on partial least squares assumptions or PLS-SEM with the SmartPLS 3 software package. The results confirm that product and process innovation significantly influence business innovation, while marketing and organization do not reach statistical significance. Furthermore, it is considered that business innovation can improve business development. This finding highlights the importance of prioritizing innovation strategies in highly competitive sectors such as the gastronomy sector in Lima.
