The pandemic produced by SARS-COVID-19 caused the Ecuadorian economy to be directly affected. The gastronomic activity was one of the sectors that perceived the greatest negative impact. It is known that the health crisis triggered tens of thousands of deaths and the large closure of businesses in Ecuador. In this document, the reader will be able to find out about the incidence that the pandemic produced in the social and economic field in the restaurants of the city of Tulcán in the year 2021. In order to fulfill the objectives, non-probabilistic exploratory sampling and data collection were established as a methodology by applying surveys to the owners of gastronomic establishments to determine the strategies they used to face the health emergency, thus managing to know the positive effects and Negatives that it left.
